Tech sheets reproduced by merchants place the fruit in two parcels in the commune of Bevagna: one at Arquata itself, southeast-facing at about 230 m on clay-calcareous soil, the other at Colcimino, northwest-facing at about 360 m on sandier calcareous clay. The same sheets describe whole-cluster pressing, a day of cold settling, fermentation in stainless steel at 15-17 C and about four months on fine lees; the producer's own page keeps it simpler - the wine ferments and rests in steel, then gets roughly six months in bottle before release.
2024 was a recovery year in Umbria: after disease-hit 2023 the region brought in around 30 percent more fruit, with a favorable season and healthy clusters. Local harvest reports have the region's whites picked from mid-August - international varieties first, Grechetto after them - well before the October rains that complicated the late red harvest.
