The appellation requires the second fermentation to happen in the bottle, and it permits rosé to be made by blending a white wine with a red, which is what three white grapes and one black imply here.
The additions are all declared. Sucrose, liqueur de tirage and liqueur d'expedition are the ordinary furniture of a traditional-method wine; E466 is carboxymethyl cellulose, a protective colloid that stops potassium bitartrate nucleating, so the wine does not have to be chilled hard beforehand to throw its crystals out. Sulfites do the antioxidant work. Sugars come to about 12 g/L, the top of the brut band.
The protected origin is Moselle Luxembourgeoise, with Crémant de Luxembourg a designation inside it. That indication can only be used once the wine has passed analytical and sensory examination, which is what the Luxembourg state control mark certifies.
Poll-Fabaire is the crémant brand of Domaines Vinsmoselle, the Luxembourg growers' cooperative, and is produced at its Wormeldange cellar.
