Olivier Bonville already runs his family's house in Avize, Franck Bonville. With his son-in-law Ferdinand Ruelle he started a second label with a different brief: a wine from each of Champagne's 319 villages, one stop at a time.
Avize is the home port. The winery sits in former stables they restored, and the Blanc de Blancs comes from historic plots leased from their family and neighbours. Five permanent cuvées make up the Avize range. There is a Brut Grand Cru Blanc de Blancs and a 2017 vintage Blanc de Blancs from a demanding year. Le Levant comes from the earlier-ripening southern slope of Avize, and Le Couchant from the slower northern one. The rosé was their first step beyond Avize, with red wine from the Montagne de Reims.
The cuvées are numbered as days, and the days began at home: Le Levant and Le Couchant were days one and two. From 2020, each year adds one curiosity cuvée from a new village. Day 3 took them to Belval-sous-Châtillon in the Vallée de la Marne, and David Faivre's Meunier. Day 4, in 2021, is Mareuil-sur-Aÿ: two parcels of Pinot Noir and one of Chardonnay. Days five and six, Chamery and Landeville, are next to be released.
At one day a year, the whole voyage would take more than three centuries. Four days are in bottle so far.
