This completely blindsided me. Starts like it's going to be another good yet straightforward Listán, just like many other new labels I've tried over the last few days. Flint, smoke, lemon, nothing fancy. Then it completely flips the script. Suddenly there's lemon cream, roasted almonds, that smoke threading through everything. Vanilla and cinnamon appear, even rye bread notes. The balance is stupid good - round and creamy but with this sneaky acidity keeping everything alive. Beautiful structure and energy. Maybe it won't age forever, but who cares? This is what happens when someone truly understands their terroir but isn't afraid to make it sing for a wider audience. That finish just goes and goes.
From 2022 technical sheet:
- Fermentation: Spontaneus by native yeast in Fudres and french oak barrels of 500 lts.
- Ageing: 9 month with its lees in french oak Fudres and barrels of 500 lts.
