The same fiche describes the cellar work: hand harvest and sorting, 60% whole bunches, eleven days in vat with five to seven foot treadings and pump-overs, two weeks of settling after pressing, then twelve months entirely in barrels of one to five years, which rules out new wood, a further three months in tank and bottling without fining or filtration. Whether the 2022 followed the recipe to the letter the domaine does not say, and the timing suggests not quite: the label reads 12.5% and the importer sticker dates the bottling to 28 April 2025, about 31 months after harvest, where the fiche's schedule implies around 15. The domaine has farmed without herbicide since 1998 and organically since 2006. The BIVB called 2022 a generous and promising year: late budburst protected the vines from the April frost, the season swung from heatwaves to drought, and the crop came in high and clean enough that some growers vinified whole bunches, with the last Côte de Nuits and Hautes-Côtes fruit picked in the third week of September.
