Join to read it and the restPapilou is Gerard Bertrand's organic pet-nat rose - a Vin de France made in the ancestral vein, bottled to finish its fermentation in glass. The blend is Cinsault and Pinot Noir; the fizz is gentle, around two bars of pressure, with a light touch of dosage rather than the bone-dry zero of a stricter methode ancestrale. The butterfly on the label (Papilou plays on papillon) ties to Bertrand's biodiversity messaging. It is a pale, low-pressure aperitif style, not a serious traditional-method sparkler.
