Gruyère (yay!), yellow fruit, cooked onion, honeycomb, propolis. Really intriguing - salty, sharp, spicy, long. It's in a good place, though it could use a bit more fruit to round things out. Still, very well done. Complex, delicious, and very interesting. There's even a whisper of Cognac in the background. Distinctive and compelling.
