Sparklife is Gutter&Stars' take on col fondo: the aged still wine was bottled to referment and was never disgorged, so the yeast stays in the bottle and the last glasses pour cloudy.
The base is single-site Chardonnay from Missing Gate Vineyard in Essex's Crouch Valley, picked by hand and whole-bunch pressed into fourth-use French oak barrels. After a long, cool fermentation and malolactic in barrel it spent 18 months on its gross lees without bâtonnage, 20 months in oak in all, before it was bottled in May 2025.
Only 300 bottles were made.
