The fermentation took 45 days. Post-fermentation, it was racked off gross lees and aged in a neutral 228-litre ex-Burgundy barrel for five months on fine lees. No battonage during this period.
The technical specs: 12% alcohol, pH of 3.08, and 8.4 g/L titratable acidity. These numbers place it closer to Loire Valley profiles than New World expressions.
Bottled unfined and unfiltered on April 7th, 2025, released May 26th. Production was limited to 280 bottles, each individually numbered. The unfiltered approach means the wine may develop sediment.
The name references "Drink The Sunshine," the 1996 debut single from West London indie-punk band Symposium. Chris Wilson produced both the wine and contributed to the label artwork.
Ratings
Weird wine. Fun to drink with bizarre descriptors, but definitely lacks depth and complexit. Still, this is absolutely a unique experience. Boiled crayfish, crab, dill flowers, grass, kumquat, hint of pickled cucumbers. Quite high acidity but rounded despite the crispness thanks to lees ageing. Some rotten/fermented fruit creeps into the finish. Fascinating stuff - now I'm genuinely curious to explore more from this producer. Extra point for unique experience.
