Pinot Noir is Borys Slaboshevskyi's favourite grape and Vinoman's flagship wine. The winery makes it in more than one version, from different terroirs, and "U" is its own mark for telling those Pinots apart.
Vinoman says the 2021 comes from the same terroir as its celebrated 2017 Pinot Noir. The 2024 Pinot Noir, by contrast, brings together two terroirs in southern Bessarabia.
The wine was aged in one of the winery's signature barrels of Ukrainian rock oak, the native sessile oak. The time in barrel is nine months by the bottle's hand-written count; the winery's shop page for the same vintage says twelve. It was made in Zhavynka, on the Desna outside Chernihiv, in a hand-numbered lot of 1,400 bottles.
