I can't quite share the enthusiasm some have for this wine. It's like a Muscadet trying to channel serious Palomino Fino/Listán Blanco, but without the depth or salinity to rise above being a pleasant oyster-and-calamari companion. To be fair, there are interesting elements - seawater, bitter herbs alongside sweeter medicinal notes, a touch of nuts, lemon, and plenty of green tones from grass to unripe fruit - but the palate lacks structure and confidence. Mineral, yes, but also closed and a little reticent. Maybe it just needs more time; I don't have enough experience with this producer or variety to say for sure.
