Fantastic Aligoté! Green and white fruits, candle wax, hibiscus crust, lime, chalk, white flowers and a faint smokiness. It's crunchy but the acidity doesn't bite - everything sits in a mineral texture that feels cleansing in the best way 🙂. Over time, it starts to show mushrooms, sardines with lime, and a beautiful saline finish. Super energetic wine. It's deep, layered, and just keeps evolving. We even left it in the glass and went out for a walk with the dog - came back in an hour and it was still alive and spinning new tricks.
