Cool Champagne with the oxidative register I lean toward - mushrooms and bruised apples leading, with the barrel-aged Chardonnay (a year in cask before assemblage) giving the wine a vinous spine. Long finish, properly complex, but still wearing its youth - this June 2025 disgorgement hasn't fully relaxed yet. Super tasty even now, and it'll only get better with another year or two in bottle. Beautiful.

Premier Cru Champagne from Waris-Hubert in Avize (Côte des Blancs), with the fruit drawn from Grauves village. 60% Chardonnay aged one year in barrel plus 40% Pinot Noir, vinified and bottled by the récoltant-manipulant family. Extra-Brut at 3 g/L dosage. Disgorged June 2025.
