About
Atoma is the multi-vintage Blanc de Blancs of Agrapart Avize, the house Fabrice Agrapart founded in Avize in 2020, and its name carries the idea behind it. Since 2020 the house has kept a perpetual reserve of Grand Cru Chardonnay in stainless steel, and a fifth of every Atoma is drawn from it. Each bottle therefore holds, in the house's words, an atom of every vintage since the reserve began.
The fruit comes from seven villages: Avize, Cramant, Oger, Oiry, Le Mesnil-sur-Oger, Vertus and Bergères-lès-Vertus. Half the wine rests on its fine lees in stainless steel and half in foudres of Montagne de Reims oak. Fermentation runs on indigenous yeasts, and malolactic goes through in full.
It went into bottle without fining or filtration and was riddled on gyropalettes, while the house riddles its Anthocya by hand. Every bottle is disgorged at least 60 days before it is released.
