L'Ouverture is Savart's entry wine, and its name - the overture - fits: a Premier Cru Extra-Brut that opens the range without being simple. It is 100% Pinot Noir from Ecueil, a non-vintage blend of several successive years, raised about half in mostly-neutral barrel and half in stainless steel with partial malolactic. The dosage is low and has trended lower over the years; this bottling was finished at 3.5 g/l and disgorged in September 2025.
