There's a touch of oxidation that adds character. The mousse is powerful yet elegant (that phrase earns its place here - it's not marketing bollocks, it's what's happening), with crisp acidity keeping everything in check. Textured, round with zesty backbone. Fresh and lively with a long, crisp finish.
