Camel Valley's pink sparkling wine is made from Pinot Noir alone, and its colour, as Sam Lindo tells it, is a side effect of the house method rather than a goal: the grapes are crushed to get more fruit from them, and the juice picks up colour on the way.
The time on the lees is set, in the producer's words, for fruit freshness and a fresh, yeasty character. The 2014 was the current release through 2017.
