Join to read it and the restOW is the skin-contact experiment of Martín Códax, the Cambados co-op founded in 1986 that draws Albariño from around 550 grower families across the Salnés valley. First released in November 2019 as a 924-bottle run, it inverts the house style: whole berries ferment and the wine then stays macerating on its skins and seeds in tank for months - six in the first edition, eight for this bottling - before release. It is sold without appellation - the label says only "Viño Branco" and carries no vintage, just a harvest date of 3 September. Enology director Katia Álvarez calls it the closest thing to making a white like a red, and the skins deliver: amber colour, real tannic grip, candied orange, quince and dried apricot over the salty Atlantic edge of the Salnés.
