The name is the cellar term for the wine that evaporates from the barrels as it matures, which, as the producer tells it, medieval winemakers put down to angels taking their share.
2023 was a hard, late year in McLaren Vale. A wet, humid winter brought heavy disease pressure, and a cold, wet November stalled the vines for weeks. Ripening was cool and slow, yields were down, and picking in McLaren Vale began in late March; Two Hands finished on 2 May, its latest vintage ever.
The grapes were crushed into open fermenters of 5, 7 and 10 tonnes, pumped over two or three times a day at the peak of fermentation, and spent on average 15 days on skins. The wine then had 12 months in French oak hogsheads and puncheons, 10 to 15% of them new. As late as 2013 American oak was still in the mix; the 2023 is all French.
