Blind tasting this was like chasing a shapeshifter. First impression screamed Canary Islands - all volcanic smoke and tight minerality with great acidity. Then something whispered Jura. Give it air though, and the smoke vanishes like a magic trick, leaving something distantly Riesling-esque. Never would have guessed Austria nor Grüner Veltliner. Fresh lemon, sea pebbles, spices, and that telltale gudron note. Acidity sharp enough to cut glass but somehow it all balances. Like two different wines in one bottle - the brooding opener and the electric finale. Interesting stuff.

This wine presents a stunning bouquet, evoking aged Champagne with a twist of Jura allure. Notes of bruised apples, Jerez, orange peel, grilled lemon, sea pebbles, cider, and spices create a captivating aroma. On the palate, it offers a more challenging experience with sharp acidity, yet maintains commendable balance and structure, leading to a long aftertaste. The presence of aged baimudan cake and dried apricot candy adds complexity to the overall experience.

This wine presents an attractive oxidized bouquet, with intriguing notes of bruised apples, nuts, grilled lemon, sea pebbles, herbs, cider, and spices. Its palate is sharp and refreshing, supported by nice tannins that enhance its wonderful structure. The slight fizziness adds an unexpected yet pleasant zappiness. It's a nice wine that warrants a second tasting, humorously likened to an (almost) still Champagne due to its unique character and subtle effervescence.
